Potato Gratin with Rosemary Crust



Ingredients:

  • 1 Refrigerated Pie Crust
  • 1 tablespoon Fresh Rosemary, Finely chopped
  • ¼ teaspoon Pepper, ground
  • 2 cups Gruyere Cheese, shredded
  • 1 ½ pounds Gold Potatoes
  • 1 ½ pounds Sweet Potatoes
  • 1 teaspoon Kosher salt
  • cup Heavy cream
  • 1 clove Garlic, minced
  • Rosemary Sprigs, garnish

Directions:

1. Preheat oven to 450°. Unroll piecrusts on a lightly floured surface. Sprinkle rosemary, pepper, and 1/2 cup cheese over 1 piecrust; top with remaining piecrust. Roll into a 13-inch circle. Press on bottom and up sides of a 9-inch springform pan; fold edges under. Chill.
2. Meanwhile, peel and thinly slice Yukon gold and sweet potatoes.
3. Layer one-third each of Yukon gold potatoes, sweet potatoes, and salt in prepared crust. Sprinkle with 1/4 cup cheese. Repeat layers twice, pressing layers down slightly to fit.
4. Microwave cream and garlic in a 1-cup microwave-safe measuring cup at HIGH 45 seconds; pour over potato layers in pan. Sprinkle with remaining 3/4 cup cheese. Cover pan with heavy-duty aluminum foil. Place on a baking sheet.
5. Bake at 450° for 1 hour. Uncover and bake 25 minutes or until potatoes are done and crust is richly browned. Let stand 10 to 15 minutes. Carefully transfer to a serving plate, and remove sides of pan. If desired, carefully slide gratin off bottom of pan using a long knife or narrow spatula. Garnish, if desired.

Daymon's Plum Jelly


Ingredients:

  • 7 pounds Plums
  • 1 ½ cups water
  • 1 box Sure Gel
  • 7 ½ cups sugar
  • teaspoon paraffin wax

Directions:

1. In a large pot, cover 7 pounds of fruit with 1 1/2 cups water. Bring to a boil, then simmer, covered, 10 minutes.
2. Put the berries and liquid through food mill (you should get 5 1/2 cups juice; for a clearer jelly, do not press on pulp, and for an even clearer jelly, you can strain it after it goes through the mill)
3. Sure-Gel fruit pectin and bring to a boil. Add 7 1/2 cups sugar and bring to a hard boil. Boil 1 minute and take off burner. Let set for a few minutes, then skim off foam.
4. Put in hot jars. Top each jar with 1/8 teaspoon paraffin wax.

Biscuits with Sausage-Apple Gravy



Ingredients:

  • 4 Frozen Biscuits
  • 2 teaspoons Butter
  • 1 medium Apple, coarsely chopped
  • 1 pound Pork Sausage
  • 3 tablespoons All-purpose flour
  • 2 ¼cups Milk
  • teaspoon onion salt
  • teaspoon black pepper, coarsely ground
  • dash Cayenne pepper

Directions:

1. Heat oven to 375°F. Bake biscuits as directed on bag.
2. Meanwhile, in 10-inch nonstick skillet, melt butter over medium heat. Add apple pieces; cook 4 to 7 minutes, stirring occasionally, until crisp-tender. Remove; cover and keep warm.
3. Increase heat to medium-high. In same skillet, crumble sausage; cook 4 to 6 minutes, stirring frequently, until no longer pink. Add 1 tablespoon of the flour, stirring constantly, until brown. Stir in remaining flour. Stir in milk with wire whisk. Cook about 3 minutes, stirring constantly, until mixture thickens. Stir in apple pieces, onion salt and peppers.
4. Split warm biscuits; place on 4 serving plates. Top with sausage-apple gravy.

Waking up to snow


I knew that it was going to snow in the northern part of Arkansas last night, but I had no idea that we were going to get any here. This is what it looked like when I wen out to get my newspaper this morning.

This is also the third winter event since Christmas Eve. For us in the south, it is like being on the tundra!

In bloom


This is a photo of my orchid in bloom. It is a mix of sad and beauty. I always gave the flower sprays to either Charlene or Grandma. Since they are both gone now, I don't have a girl to give flowers to anymore. Big sigh...
